Alfa is a family business. The concept began with one person and later on one company-owned location, and by 2003 the chain had expanded to four locations. In the mid 1950’s Mr. Thanasis Koukoutaris, the founder, began “hands – on” producing and selling pies. The company was founded later on, in 1965. During winter season, Mr Thanasis had to walk around the city to sell freshly baked warm pies (bougatsa and tyropita) kept in a wooden case. Hot charcoals were stored on the bottom part of the case to keep the pies warm. During summertime, he managed to obtain a tricycle and sell homemade ice cream.
Mr. Thanasis`s Koukoutaris vision was to expand and satisfy his desire for high quality. His reputation started growing outside the city’s borders of Kozani and business was increasing steadily. The idea was mass production following traditional recipes. Most importantly country fyllo replaced puff dough as a product basis. In the meantime, the wooden case and the bicycle were also replaced with new dreams. The family started to operate a very successful small factory. In the 1980s few employees were hired and his two sons, Dionysis and George, took over as salesmen.
Numerous orders came from different cities of the Northern part of Greece. KIHI pie’s popularity grew for its traditional shape, the freshness of its pure ingredients and the difference in taste. In the 1990s, alfa moved into a bigger factory with the latest technology at the time, and hired additional personnel. New production, accounting and sales departments were opened. In the late 90s, the company opened new facilities in Athens, Salonica and Ioannina.
As a company, knowing well our challenges and potential of our competitiveness, we invested heavily upon advertising of our already most promoted products. Television spots, open-air commercials, magazine commercials, promoted measures and exposure on sales in synergy, classifying the creations of dough as one of the consumers’ and commercialists’ first preference. The demand for KIHI pie increased rapidly and almost surpassed supplies.
Alfa has grown substantially in the past ten years. Today, Alfa completed four decades with high traditional pastry products and values of a Mediterranean-based diet. Our Headquarters remain in Kozani, in a modern industrial facility with the most impressive technology which is located in a 8.000 m3 area and 30.000 m3 storage. Mr. Thanasis’s two sons play a major role in the company. Dionysis, his first born, is the managing director and George, his second, is the production manager. With their father’s guidance and help they succeeded to become one of the largest industrial pastry company in contemporary Greece.
As a company with a 42 year tradition in the industry, we invest in the quality and variety of our products. We appreciate consumer and corporate needs and offer them unique traditional recipes. The extent of variety in products, in excess of 240, reaches the major markets of the country via a well organized network.
The company products have been well received in the market and Αlfa experienced a 535 percent of sales increase between 2000-2004, thanks to KIHI mass production and advertisement. Remarkably, in 2004 Alfa is ranked 2nd among the biggest national companies in the food private sector. By the end of 2003, alfa products were available in every city, every supermarket, bakery, café, or hotel. Alfa is continuously evolving and maintains our leading role in the Greek market with a love and passion for tradition. Traditional recipes and baking secrets are being passed on for generations. As a result, it meets today’s consumer’s needs and preferences.
Today, Alfa exports to Europe, Canada, USA and Australia. The products are well received and the aim is to enlarge the existing co-operations and to open new markets.
Alfa having achieved success in her products, such as traditional Kozani pie “Kihi” increases her family with new creations. Our creations are distinguished for their competitive advantages in taste, quality and innovations, with one and only purpose to always offer the best quality in the domestic market as well as abroad.
As a company we give priority to the Mediterranean based diet and its nutritional values. Costumers are aware of this and prefer our products because:

Alfa also invests heavily on packaging and is constantly looking for ways of making the consumers involvement in baking, fast and easy. Since December 2005 KIHI family size was introduced in a new paper baking tray. This resulted in perfect baking. The old aluminum trays created problems since they are not a good feed for electricity. Nowadays, consumers all over Europe remove the paper cover and place the KIHI pie with the paper tray in the oven. It takes 35-40 minutes to bake in 180oC (356o F) and the pie is ready to be served.
As a result most of the Greek working women have our products in the first place on their daily table and are rewarded with the phrase “my compliments to the chef” which is used as our company’s catchphrase.
Alfa has achieved to advertise our traditional taste over the borders with enormous success since her products are exported to more than 22 countries all over the world.
Hospitality was especially sacred since ancient times for the Greeks. The Ancient Greeks at times referred to god Zeus as Zeus Xenios, meaning he was also the god of travelers. Therefore, Zeus was considered the patron of hospitality and guests. This also created an exceptional religious obligation to be hospitable to travelers and guests and offer them food and drink.
In Kozani, the capital of Western Greek Macedonia, women prepared pastries as a treat to welcome the visitor. Pastries were filled with pure ingredients such as homemade cheese, vegetables from backyards, or even sweet cream made with fresh milk. Pastries were rolled, holding savories from the richness of our country’s land, swirled and baked in a traditional wood burning stone oven. These pies were named in Kozani “KIHI”.
Half a century ago, a mixture of the finest raw materials and traditional recipes were found in Kozani, and Αlfa was leavened. Since then a lot has changed; the company grew steadily, facilities were modernized and production methods were differentiated. However the basic principles remained constant and invariable in time.
These principles have been the company`s strong desire and passion for pastry creations, the respect for the traditional values and the persistency for the highest quality in production. Today, the delicious `alfa` pastry creations are present on all tables, thus ranking the company first in the consumers’ hearts and preferences.\

Alfa products are divided in two market categories: retail (super market, mini markets etc) and food service or catering (bakeries, hotels, restaurants, cinemas, etc).
As far as sizes are concerned, all products come in family (1kgr), personal (200gr.) and mini (50gr.) editions.
Fillings include cheese, spinach, feta, leek, sausage, vegetable, mushroom, pumpkin, Lenten flavors, chocolate, apple and sweet cream.
We really believe that consumers will be tempted to buy ‘alfa’ products since:
• they are traditional Greek products, created out of pure materials like feta cheese and olive oil

Preheat the oven at 180-200ο C.
Place the pies in the oven`s tray.
Bake for about 35-40 minutes till they get a fine baked color both on top and bottom.
